To decide if you want to change a villager’s job in Minecraft, you will first need to find out what job he has currently. It is important to remember that not all villagers have jobs. Nitwit villagers cannot cannot be employed with a job. However, it is easy to tell what job a villager has in the Minecraft world by looking at their clothing and the job block they’re interacting with. A villager’s profession will appear as a title at the top of the trading interface.

- Cartographer – Cartography Table

Change Villager Jobs in Minecraft
If you want to change jobs of villager’s in Minecraft, destroy the job site block they are interacting with. If you want to change a farmer’s job, you will need to destroy the Composter block near them. Nitwits cannot hold a job in the game. When you break the job block of a villager, it will make them angry.
However, they will switch jobs if you place another vacant job block within close proximity of the villager in Minecraft.
